A Cha-Hai (literally “Tea Sea”) is a pitcher for decanting your gaiwan or small gongfu teapot into. Not a completely essential piece of hardware, having one of these around is certainly useful. With it you have the option of stopping your brew whenever you like, and drinking it over time, instead of pouring just a little bit and allowing the teapot to overbrew.
